Sweet Butternut Squash & Onions

    3-4 small butternut squashes, peeled and cut into 3/4 inch cubes
    2 sweet onions (Vidalia or Maui Maui)
    3-4 small shallots, slivered
    4 tbsp honey (squeeze bottle is easiest)
    1/4 cup brown sugar
    2 pats of butter
    3-4 tbsp olive oil
    1/4 tsp cracked black pepper

    Heat a skillet that will hold the squash in a single layer on medium - add a dash of olive
    oil and toss in the cubes of squash.  Get them sizzling, and turn every so often to
    start getting a sear on them. Once they start browning, squeeze a couple
    tablespoons of honey through them and turn again. The honey will start caramelizing
    and will smell really good! Add a little oil as needed to keep them from sticking.
    Add the onions and get them slightly oiled too. Toss on the shallots, pepper, butter
    and the brown sugar and blend, then reduce the heat down to medium low and let
    everything soften together, turning carefully with a spatula occasionally to keep
    things from sticking or burning.  Once the squash is softened completely (the
    consistency of sweet potatoes) salt to taste and serve it up.
