Gazpacho

    1 cucumber, peeled and cubed
    1 green pepper, cubed
    3 slices white bread, torn into pieces
    4 cloves garlic, smashed
    salt & pepper to taste
    1/3 cup extra-virgin olive oil
    3-4 tbsp red wine vinegar
    1 15.5 oz can crushed or diced tomatoes
    1/2 can V-8 juice (Zesty if desired)

    Get out your blender and start tossing in the ingredients, adding the V-8 last. The
    best way to get a good blend is by pouring the blender into a large pitcher (enough
    to hold it all) and then adding the remaining V-8, pouring it back into the blender for a
    spin and then re-mixing. Chill in the pitcher a day for best flavor, and serve cold from
    the refrigerator. Garnish with chopped green peppers, cucumber, ham, croutons...
    anything you think you'd like in it!
    This is a great soup for the hot days of summer .  All of these ingredients can be
    tweaked for personal preference.
