Butter-Pecan Bars
    from an old West Texas cookbook

    1/2 cup butter
    2 cups brown sugar
    2 unbeaten eggs
    1 3/4 cups flour
    2 tsp vanilla
    2 tsp baking powder
    3-4 tbls extra-virgin olive oil
    1 cup chopped pecans
    1/2 tsp salt

    Melt butter - blend in sugar and remove from heat. Cool and turn mixture into a bowl.
    Add the eggs and vanilla. Sift the dry ingredients together and add to the sugar
    mixture. Stir in the pecans. Put mix into an 8 x 12 baking dish and bake @ 350 °for
    about 20 minutes. Under-baking slightly is preferred to keep them pliable. When
    done, cut into strips and dust top and bottom with confectioners' sugar.
