Danny's Chicken 'n Biscuits

    Serves: 6

    Daniel's first and favorite

    1/2 onion
    1 1/2 teaspoons butter
    4 cups chunk breast of chicken
    1 10 3/4-ounce can cream of chicken soup, roasted garlic
    1 cup sour cream
    1/2 cup milk
    1/2 cup pimiento, chopped
    1 cup mild cheddar cheese, shredded
    6 frozen biscuits, thawed

    Preheat oven to 350°. Grease the bottom and sides of an 11 x 17 baking dish.
    Chop the onion. Heat butter in an small, non-stick skillet over medium heat until
    melted. Stir in onions. Sauté until tender.
    Combine onion, chicken, soup, sour cream, milk and pimentos in a medium bowl and
    mix well. Spoon mixture into prepared baking dish. Bake for 15 minutes Remove
    from oven.
    Sprinkle baked layer with 3/4 cup of the cheddar. Arrange the biscuits in a single
    layer over the top. Sprinkle with remaining cheese.
    Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes
    longer.
    Serve immediately.

    Notes: seasoned leftover grilled chicken is heavenly for this, especially when warmed
    up with the sautéed onions!
